摘  要:对16类广式凉果中的菌落总数、真菌总数及其中的微生物种群进行调查研究,结果表明,大部分凉果产品的菌落总数和真菌总数都比较低,符合国家标准,只有2类产品的菌落总数不符合国家标准;在16类凉果产品中分离到44株菌株,其中含有芽孢的细菌32株、不含芽孢的细菌3株、酵母4株、霉菌5株,含有芽孢的细菌是凉果中最主要的微生物种群,分属芽孢杆菌属中的11个种,其中地衣芽孢杆菌有16株,此外还发现了对人体健康有一定威胁的腊样芽孢杆菌和炭疽芽孢杆菌。The number of colony,the number of fungi and the microbial species in the preserved fruits were researched. The total count of colony and fungi in most products of investigated preserved fruits were very low,which accorded with national standard,only two kinds of products were not eligible. 43 strains of microorganisms were isolated from 16 kinds of preserved fruits,including 32 strains of bacteria with endospore, 3 strains of bacteria without endospore,4 strains of yeasts and 5 strains of molds. The bacteria with endospore were the dominating microorganism in the preserved fruits, all belonged to bacillus, which were classified into 11 species. In the 11 species, there were 16 strains of Bacillus.licheniformis, and Bacillus.cereus and Bacillus.anthrais were deleterious to human health.
