摘 要:一、项目背景 随着人民生活水平的不断提高和保健意识的进一步增强,广大消费者在满足自身物质需求的同时,越来越多的人将消费目光聚集到具有保健功能的食品上。Brewage, as a kind of popular drink, alsocould bring about central obesity. So a newproduct combined brewage flavour with healthfunction is called for. Functional brewageand brewage-mate just meet this demand.They could adjust the equilibrium of humanintestine system and prevent fat accumulating.As a kind of additives used in conventional brewage products, brewage-mate also could be widely ac-cepted by consumers with functional brewage becoming popular. The primary effective ingredient of the new product isstachyose. Actually, the popular raw material for stachyoseextraction is soybean, but its weakness is low extract efficiencythat causes huge waste. Instead, Chinese artichoke tuber or herbhas been applied to stachyose production, but due to largeinvestment and high cost, the current technique is not feasiblein mass production. Therefore, the price of stachyose stillstabilizes at a high level, approximately 150-200 RMB per Kg.Indeed, it is the extracting technique that becomes a bottleneckrestricting the development of functional brewage productionand market However, the paper introduces a new project as an appli-cable method for functional brewage production that combinesthe modern brewage technology with efficient stachyoseextraction. The project uses Chinese artichoke as raw material,while applies a few equipment that merely cost 300 thousandsRMB or so. It involves technologies of Chinese artichokeplanting, stachyose extraction and functional brewageproduction. The scientific design could simplify the conven-tional technology, enhance efficiency and reduce cost. The consumption of traditional brewage products is around20,000,000 tons annually. Considering the great demand forhealth function, if the market share reaches 1 % at the beginning,the profit of functional brewage product would be ratherconsiderable.
