摘  要:为了比较鸡油和豆油在地方鸡和快大型肉鸡日粮中的使用效果,试验选用AA肉鸡和北京油鸡,在其日粮中分别添加鸡油和豆油,比较其对生产性能、肌肉品质(胸肌粗脂肪含量、肉色、pH值)和血液脂肪酸代谢的影响。结果表明:AA肉鸡和北京油鸡生产性能与油脂来源无关(P>0.05),只表现品种差异(P<0.001),肉鸡品种和油脂来源对生产性能影响不存在互作关系(P>0.05)。肌肉pH、肉色以及血清游离脂肪酸含量不受肉鸡品种和油脂来源影响(P>0.05);胸肌粗脂肪含量受品种影响,北京油鸡胸肌粗脂肪含量高于AA肉鸡(P<0.10),与油脂来源无关;血清总胆固醇含量受肉鸡品种和油脂来源影响,而且存在极显著互作关系。试验表明肉鸡生产性能及肌肉粗脂肪受肉鸡品种影响,与油脂来源无关,鸡油和豆油对快大型肉鸡和地方鸡生产性能和鸡肉品质没有影响。In order to study the effect of poultry fat and soybean oil on growth performance and carcass quality of native chickens and broilers,Arbor Acres(AA)chickens and Beijing fatty (BF)chickens were fed with diet adding poultry fat and soybean oil. Growth performance,carcass quality (breast fat,colour and pH),and the content of free fatty acid and cholesterol in serum were determined. The results showed that there were no significant difference for performance, pH and colour of breast muscle and free fatty acid between BF chickens and AA chickens fed with poultry fat and soybean oil (P〉0.05). BF chickens had greater breast fat and cholesterol in serum than AA chickens (P〈0.05),and its cholesterol in serum of chickens fed with poultry fat was significantly higher than that of soybean oil (P〈0.001). It may be concluded that there was no difference on growth performance of native chickens and growth rapid broilers and carcass quality between poultry fat and soybean oil.
