摘  要:以工夫红茶代表性产品祁门红茶为对象,应用测色技术及多元回归分析法研究干茶外观色泽、干茶粉末色泽、茶汤色泽、完整叶底色泽及粉末叶底色泽各色度值与工夫红茶品质的相关关系。研究表明,以干茶外观色度值所建立的多元回归方程复相关系数最高(0.9501),经验算品质模式有很好的拟合度,是简便、快速评价工夫红茶品质的可行方法。he author applied the measuring color technique and multivariate regression analysis method to study the correlations between congo quality and color values of dried tea surface ,tea powder, tea liquor,intact and powdered leaves of Qimen black tea which can be representative of congo. The results showed that the multiple correlation coefficient of the multivariate regression equation which was founded on the color value of dried tea surface was the highest of all coefficients. It was 0.9501. After checking, the quality model is proved to be quite good coincidence degree. It was also practical to evaluate the congo quality conveniently and quickly with the measuring color technique.
