摘 要:目的:了解本区2005-2007年度各类食品在加工和销售过程中微生物污染状况,有利于我们对一些主要超标行业和样品进行关注和重点检测,为食品放心工程建设提供科学依据,保证食品卫生安全,控制和消除食品污染对人体的危害,防止食源性疾病和食物中毒的发生。方法:对2005-2007年度抽检的各类食品微生物检测结果进行统计分析。结果:检测样品2733件,合格1784件,合格率为65.3%,微生物污染较严重的食品是豆制品和肉制品。不同年度食品微生物检测合格率有显著性差异,不同种类食品微生物检测合格率有显著性差异。结论:食品样品的合格率与人们对食品安全的要求还有相当大的距离,今后卫生监督部门要加强对豆制品、肉制品企业的生产加工过程的经常性监督、指导,使群众吃得放心。Objective:To analyze the microbe pollution status of food from 2005 to 2007 for providing the scientific evidence for food hygienic supervision and inspection and preventing food - originated diseases and food poisoning in Wanzhou District of Chongqing Municipality. Methods: The results of food samples examination in 2005 - 2007 were analyzed statisticly. Results: Out of the 2733 samples detected, the qualified rate was 65.3%. The food microbe poisoning often come from the course of food production. The majority of poisoning foods were animal foods such as meat and bean products. There were significant differences in the qualification rate analysis of food microorganism in different years and different category. Conclusion: A lot of work in the qualified rate should be done to satisfy the demand of food quality security and people's requirement of food safety. Institution for health inspection and supervision should strengthen the supervision of food such as meat and bean products.
