摘 要:目的:了解赣州市章贡区2001-2006年食品卫生状况,对不同来源的12类食品进行微生物卫生质量检测分析,为制订有效的食品卫生监督管理措施提供依据。方法:对不同来源的10071份食品,依据国家标准《食品卫生微生物学检验》(2003),测定了食品中菌落总数、大肠菌群、致病菌,并按《食品卫生国家标准》(2005)进行了评定。结果:2001-2006年度检测10071份食品,平均合格率为67.30%。其中,酱腌菜、酒类、糖类合格率最高,分别为94.50%、93.67%、90.28%;豆制品和肉制品合格率最低,分别为35.54%和33.68%。结论:肉制品、豆制品存在比较严重的卫生质量问题,应提醒有关部门加强对这两类食品的管理,防患于未然。Objective:To study the hygiene status of food in Zhanggong District in 2001 -2006. We detected 12 Categories of food on microbiology to determined the hygienic quality, then provided the base to formulate measures of food hygiene supervision and inspection. Methods:The total amount of bacteria, coliform bacterium and pathogenic bacterium of 10071 samples from 12 categories of food were examined, based on《Microbiological examination of food hygiene》 ( GB/T4789 - 2003 ). Then, the datum were statistically analyzed according to the《GB of food hygiene 》 (2005). Results:The average eligible rate of 10071 samples was 67. 3% during 2001 -2006. The eligible rates of pickle products,wine and candy were 94. 5% ,93.7% and 90. 3% respectively. The eligible rates of bean products and meat products were 35.5% and 33.7% respectively. Concluslon:The eligible rates of bean products and meat products were too lower. The quality of the two products was wery terrible. Supervision and surveillance must be strengthened as early as possible.
