摘  要:利用衍生化气相色谱法分离测定葡萄、葡萄酒中多元有机酸;通过不同酯化方法的比较,选择在N,N-二甲基甲酰胺非质子溶剂中,利用碘乙烷与多元有机酸的四甲基铵盐反应制备各酸相应的乙酯,在SE-30色谱柱上利用程序升温进行分离,同时采用内标法鉴定分析了葡萄、葡萄酒中的多种多元有机酸,并比较测定了葡萄和葡萄酒中多元有机酸的含量。揭示了葡萄酒制备过程中主要有机酸的变化。该方法定量测定的回收率都>95%,相对标准偏差<5.0%,适合于各种葡萄酒及啤酒等酒类饮品中有机酸的测定。Objective: Derivatization Gas Chromatography was used for the determination of polybasic organic acids in grape and wine,dif ferent esterifieations have been compared and the follows has been selected: polybasie organic acids were neutralized by tetramethyl am monium hydroxide and formed tetramethyl ammonium salts of the corresponding acids,which the next step could be esteritied with io doethane as esterifieation reagent and N,N-dimethyl formamide as solvent, the ethyl esters acquired excellent resolution with Tempera ture programming and determined with Internal standard method by GC-9790 chromatograph equipped with SE-30 column, mean while Contents of polybasic organic acid in grape and wine were determined and comparison. It Showed rarity of mostly organic acids in wine preparation. Average recoveries of the method were above 95%, Relative standard deviations were under 5.0%, it is suitable to analysis of organic acids in kinds of wine and beer.
