摘　　要：本试验对大曲中酵母菌进行分离纯化,共得到8株酵母菌。从形态学和生化鉴定两方面对其进行属的鉴定。将其归入4个属,分别是汉逊酵母属、假丝酵母属、酒香酵母属和德克酵母属。In this paper, by Daqu yeast in the extraction and separation experiment is eight yeast. Generic Identification was conducted through Morphology and biochemistry. All these strain yeasts were included in 4 categories such as Hansenula, Candida, Brettanomyces and Dekkera.
