摘  要:以草莓在波形振动半流化速冻机内冻结过程为研究对象,分析了物料冻结过程的特点,建立了草莓冻结过程的传热模型,根据数值传热理论确定了草莓冻结的数值计算方法。用所编制的程序模拟得到草莓不同风速和不同风温时的中心温度变化值,为速冻机的设计和优化评价提供参考依据。In this paper the freezing process of strawberry in food quick freezer with wave - vibration and semi - fluidization freezer was studied by means of numerical simulation. The technical characteristics of the freezing process were analyzed and the heat transfer model was also built. The computational heat transfer method was employed. The center temperature of the strawberry with different wind speed and temperature was obtained with this procedure. All resuits of the calculation can be used to guide food quick freezer design and optimization.
