摘 要:利用不同强度的高压电场在同一温度下对芸豆角进行了干燥试验研究,并与热风干燥进行比较,同时对干燥后的芸豆角块进行了复水率测定。研究结果表明,高压电场能够提高芸豆角的干燥速度。在同一温度下,干燥电压越高,干燥速度越快。在40℃下34kV的高压电场的干燥速度比同温度下不加电场的干燥速度提高了75.12%,其与65℃左右的热风干燥速度相近;相对热风干燥,高压电场干燥的芸豆角复水率较65℃下热风干燥的高21.41%,其表面颜色优于热风干燥。A new drying technology with the high voltage electric field was put forward for Vegetables in the paper. The Yundou beans, as a representative of Vegetables, were dried in a high voltage electric drier at 40 ℃ with 0 kv, 20 kv and 34 kv respectively, as well as in a hot -air drier at 65 ℃ (The air velocity is 0.5 m/s). At the same time, these dried beans' rehydration and color were measured. The results indicate that the high voltage electriC field can improve the drying rate of Yundou beans significantly, at the same temperature, the higher the voltage between the two electrodes, the faster the drying speed. With 34 kv voltage, the speed of the high voltage electric field drying can be improved by 75.12% compared with 0 kv, which was similar to that of the hot - air drying at 65℃. Compared with hot - air drying, the rehydration rate of Yundou beans dried by high Voltage electric field is higher by 21.41%. Furthermore, the dried yundou beans under the high voltage electric field had better color.
