摘 要:以黄豆芽为富硒载体,采用喷淋和浸泡相结合的方式添加不同浓度的硒溶液,通过黄豆的发芽过程实现对硒元素的生物富集,制备出富硒黄豆芽并分离得到富硒大豆蛋白。结果表明:当硒培养液浓度为10μg/mL、培养时间为120h时富硒效果最佳,制备出的富硒大豆蛋白富硒量为21.23μg/g。富硒大豆蛋白与普通大豆蛋白相比,氨基酸含量有明显提高,其中谷氨酸的含量提高最为显著,大约提高了35%。The selenium-enriched soybean sprouts were prepared with soybean as raw materials,and different concentrations of selenium were added into cultivation solution by soaking and spraying during the process of the soybean sprouting. The protein of selenium-enriched soybean was isolated from the selenium-enriched soybean sprouts. The result indicated that the optimum condition of cultivation selenium-enriched soybean sprouts was the concentration of selenium solution was 10μg/mL and the cultivated time was 120h, The content of selenium in the selenium-enriched, soybean protein was 21.23μg/g, the content of amino acids of selenium-enriched soybean protein was increased,especially content of glutamic acid was increased by 35% approximately.
