摘　　要：硫杂环化合物是一类新型香料,具有浓郁的特征香味和良好的生物活性,逐渐被广泛应用到食品、化妆品、建筑材料、医药制品等领域,文章主要从分子组成、香味特征、存在形式探讨了几种典型的硫杂环类香料,并对其研究现状作了分析。Sulfur-containing heterocyclic compound is a novel type of perfume which has strong specific flavor and perfect bioactivity. The overall application in the food industry, cosmetic products, building material land medical materials is progressively prevailed. Research on some typical sulfur-containing heterocyclic perfumes is reviewed including molecule composition ,flavor characteristic, exist formality and the recent development.
