摘　　要：双甘酯是油脂代谢的中间产物，工业上可以由化学法或生物酶法来合成。合成所用原料可以是甘油和油脂（油脂甘油解法），也可以是甘油和脂肪酸（甘油脂肪酸酯化法）。目前，化学法油脂甘油解生产双甘酯的工艺已相当成熟。近年的研究表明，双甘酯具有许多独特的生理作用和物化性质，可广泛地应用于食品、医药、化妆品及其他化工产品。Diglyceride,a kind of metabolic intermediate of oil & fat,can be produced viachemical and enzymatic synthesis.Theraw materials for the synthesis may be either the mixture of glycerol and oil/fat or the mixture of glycerol and fatty acid.Up to now,the process of chemical synthesis using glycerol and oil/fat is well applied.Recent investigations have shown that diglyceride can be extensively applied to food,pharmaceuticals,cosmetics and other chemical products due to its specific physiological actions and physico-chemical properties.Diglyceride is one kind of new and promising chemical product.
