摘　　要：介绍了快速检测技术,包括:化学比色法、酶联免疫法、免疫胶体金试纸、生物芯片、生物传感器、便携式色谱质谱联用仪、生物化学发光检测仪等在食品现场快速检测中的研究进展及应用,探讨了食品快速检测的发展方向。Development and application of several fast detection techniques,including chemical chromatometry,enzyme linked immunosorbent assay（ELISA）,immune colloidal gold technique,biochip,biosensor and mobile chromatography-mass spectrometer for rapid detection of food were introduced.The prospect of fast detection of food was discussed.59 references were cited.
