摘  要:采用分光光度计法测量了大曲的糖化酶活力。结果表明,糖化酶水解淀粉产生的葡萄糖与3,5-二硝基水杨酸(DNS)反应生成的棕红色3-氨基-5硝基-水杨酸,在波长520nm处的光吸收强度与糖化酶活力呈正比。The activity of glucoamylase in Daqu was determined by spectrophotometer, The results showed that the absorbance of 3-amino-5-nitro-salicylic acid, which was formed from the reaction of glucose produced by hydrolysis of starch granules by glucoamylase and 3,5-dinitrosalicylic acid, was proportion to the activity of glucoamylase at 520 nm. The method could quickly determine the activity of glucoamylase due to its simple process.
