摘  要:[目的]了解无锡市主要食品中致病菌的污染状况,为有效预防食源性疾病提供科学依据。[方法]按国标方法,对8类食品中的沙门氏菌、单核细胞增生李斯特菌、肠出血性大肠埃希菌、空肠弯曲菌、副溶血性弧菌和金黄色葡萄球菌进行分离与鉴定。[结果]2005~2007年在全市8类食品374份样品中共检出致病菌32株,总检出率为8.56%。其中副溶血性弧菌检出16株,检出率为4.28%;沙门菌检出15株,检出率为4.01%;单核细胞增生李斯特菌检出1株,检出率为0.27%;未检出金黄色葡萄球菌、肠出血性大肠埃希菌、空肠弯曲菌。[结论]无锡市食品中存在食源性致病菌的污染,其中生肉制品和水产品受到的污染最为严重。有针对性防范和控制各类食品致病菌的污染,是防止食源性疾病暴发的重要措施。[Objective] To characterize the pathogens contanfination in food in Wuxi City and to provide the scientific basis for effective prevention of the food -borne diseases. [ Methods ] Food samples were collected in 8 kinds of foods and examined for presence of Salmonella enterica, Listeria monocytogenes, Enterohaemorrhagic eseherichia coli, Campylobacter jejuni, Vibrio parahaemolyticus and Staphylococcus aureus according to the national standard guide. [ Results] 32 (8.56%) pathogenic bacteria were isolated from the 374 specimens during the period of 2005-2007. Among them, 16 (4.28%) were the Vibrio parahaemolyticus, 15 (4.01%) were the Salmonella enterica., 1 (0.27%) was the Listeria monoeytogenes. But the Staphylococcus aureus, Enterohaemorrhagic escherichia coli and Campylobaeter jejuni were not found. [ Conclusion] Food might be polluted by pathogenic bacteria in Woxi City. In which, the pollution of raw meat product and the aquatic product are the most serious . Specific efforts towards prevention and control of food contamination are crucial to prevent food-borne illness.
