摘  要:为开发一种新型的、功能性天然食品添加剂,对憎水性栀子蓝色素的紫外-可见光谱性质与稳定性进行了初步研究.结果表明:色素溶液在595 nm左右有最大吸收峰;对酸和碱有一定的稳定性,其吸光值在酸溶液中有一定下降但不明显,在碱溶液中反而上升;25℃12 000 lx光强下静置28 d色素吸光值保留率仅为0.528;还原剂Vc和草酸对色素溶液稳定性几乎没有影响,氧化剂NaC lO和K2Cr2O7都会使溶液明显褪色,其中NaC lO的影响更为显著;金属离子Mg2+和Ca2+有一定程度的保护和增色作用,Cu2+和Sn2+会使色素溶液出现絮状沉淀,并且加入Sn2+的试样褪色十分明显,Fe2+使色素溶液出现悬浮沉淀;防腐剂苯甲酸钠和山梨酸钾对色素有明显增色作用,经过24 h静置后的试样,吸光值略有下降,但仍然保持良好的色调.To develop a new, natural functional food addtive, the ultraviolet - visible spectroscopy and stability of hydrophobic gardenia blue pigment were studied. The Results showed that this pigment had the maximum absorption peak at about 595 nm, with a high pH stability. Its absorbance value decreased a little but not obvious in acid situations, and enhanced in alkali situations. After treatment with 100% light intensity at .25℃ for 28 d, its retention rate of absorbanee value was only 0. 528. Reduetant such as Vc and oxalic acid were proved have no effect on its stability, while oxidant such as NaClO and K2Cr2O7 both caused obvious discolorations and NaClO had an much more significant effect. Mg^2+ and Ca^2+ showed a certain color maintenance, Cu^2+ and Sn^2+ caused precipitation and the effect of Sn^2+ was more significant, Fe^2+ made the solution produced suspended panicles, Benzoate and potassium sorbate could obviously increased the stability of the blue pigment, after 24 h its absorbance value declined slightly but still hold a good color.
