摘  要:研究了一种适于农户及中小企业加工生产天然椰子油的工艺。试验发现,纤维素酶对椰浆的破乳效果好,所得椰子油清澈,椰香浓厚。纤维素酶水解制备天然椰子油适宜的工艺条件为:椰肉榨汁时料液比为10:4,纤维素酶用量为0.20%(以纯椰浆计),在50℃酶解36h后直接分离椰子油,再用500目滤布过滤,椰子油提取率可达92.86%。再将所得粗椰子油在60℃、0.07~0.08MPa真空下干燥1h,可得到水分含量为0.12%、酸值(KOH)为O.28mg/g的天然椰子油。用该方法生产椰子油工艺简单,设备投资小;以2007年市场行情计,加工1个椰子果利润为0.83元。The processing of virgin coconut oil that suits for farm, small and medium -scale enterprises was studied. It found that cellulase had good effect on the demulsification of coconut cream and the obtained coconut oil was very clear and had conspicuous coconut flavor. The optimal conditions of preparing virgin coconut oil were as follows:ratio of solid to liquid 10:4 (when extracting coconut cream), amount of cellulase 0.20% (based on pure coconut cream), hydrolysis temperature 50 ℃, time 36 h. The hydrolysate was separated directly to obtain crude coconut oil, the oil was then filtered with cloth filter (500 mesh) and dried for 1 h at 60 ℃ under vacuum degree of 0. 07 - 0.08 MPa. The extraction rate of coconut oil could reach 92.86% , and the water content and acid value of the virgin coconut oil obtained were 0.12% and 0.28 mgKOH/g, respectively. The method of producing coconut oil was simple, and its investment was low, the profit of processing one coconut was 0.83 RMB (based on the market quotation of 2007).
