摘 要:【目的】研究乙醛浓度处理对桃果实软化的影响。【方法】以‘大久保’桃为试材,用0、0.5、1和2ml·kg-1乙醛熏蒸桃果实12h后分别贮藏于室温(20±2)℃和(0±2)℃下,测定果实硬度及相关酶活性。【结果】在20℃条件下,经0.5和2ml·kg-1处理的果实多聚半乳醛酸酶活性(PG)低于对照及1ml·kg-1处理;各浓度处理有提高果实果胶甲酯酶活性(PE)、降低β-半乳糖苷酶活性(β-GAL)的趋势;0℃下,乙醛处理后果实PG活性及PE活性与对照无明显差异,经1和2ml·kg-1处理果实β-GAL活性高于对照及0.5ml·kg-1处理,但差异不显著。【结论】在2种贮藏温度下,适当浓度的乙醛处理使果实保持较高硬度,较低呼吸强度,并降低果实可溶性果胶含量。[Objective] The effect of acetaldehyde treatment on softening of postharvest ‘Okubo' peach (Prunus persica L.) was investigated. [Method] The peaches were fumigated with 0, 0.5, 1 and 2 ml·kg^-1 acetaldehyde for 12 hours, then stored at room temperature (20±2)*Cor (0±2)℃. The changes of firmness and related enzymes in fruits were detected. [Result] At 20℃, the activities of PG (polygalacturonase) in 0.5 ml·kg^-1 and 2 ml·kg^-1 treatments were lower than those in control and 1 ml·kg^-1 treatment, and all of the treatments trended to increase PE (pectin esterase) and decrease β-galactosidase activities. At 0℃, the activities of PG and PE in acetaldehyde treatments showed no obvious differences with control, and the β-galactosidase activities in 1 ml·kg^-1 and 2 ml·kg^-1 treatments were higher than control and 0.5 ml·kg^-1 treatment with no significant differences. [ Conclusion ] The result showed that acetaldehyde treatments at suitable concentration maintained the higher firmnesses, lower respiration rates and decreased the contents of water-soluble pectin both at room temperature (20±2)℃ and (0±2)℃, respectively.
