摘 要:目的研究危害分析关键控制点(HACCP)系统在企业食堂卫生管理中的应用效果,以提高食品卫生安全质量。方法运用HACCP系统的基本原理和方法,对企业食堂卫生管理进行危害分析及关键控制。结果实施HACCP管理系统后较"实施前"在卫生管理、卫生基础设施投入、食品加工制作等方面均有明显改善。结论HACCP系统对于提高企业食堂卫生管理水平、预防集体食物中毒及食源性疾患发生有较好作用。[ Objective] To study the application effect of HACCP system for sanitation management in enterprises canteens, so as to improve the quality of food hygiene and safety. [ Methods] The basic principles and methods of HACCP were applied to conduct hazard analysis and critical control on sanitation management in enterprises canteens. [ Results ] Sanitation management, health infrastructure investment, and the production of food processing had significantly improved after the implementation of the HACCP man- agement system than before. [ Conclusion ] HACCP system plays a better role in improving sanitation management in enterprises canteens, and the prevention of collective food poisoning and food borne diseases.
