摘  要:从蚕豆壳中提取原花青素,研究了原花青素粗提物对.OH和DPPH.的清除能力、还原能力以及抗脂质过氧化能力。结果显示,粗提物浓度在0.05mg/mL时,对.OH的清除率达到92.00%;浓度在0.10mg/mL时,对DPPH.的清除率达到90.87%;浓度在0.20mg/mL时,对脂质过氧化的抑制率达到56.41%。此外,原花青素粗提物还具有一定的还原能力。实验结果表明,从蚕豆壳中提取的原花青素粗提物具有较强的体外抗氧化活性。Procyanidins was extracted from broad bean shell.Elimination abilities of hydroxyl radical, DPPH radical, as well as the ability to reduction and the anti-lipid peroxidation capacity were studied in vitro.Hydroxyl radical was scavenged by 92.00% when the concentration of crude extract came to O.05mg/mL, DPPH radical was scavenged by 90.87% at a concentration of 0.1mg/mL, and lipid peroxidation inhibition rate of procyanidins was 56.41% at a concentration of 0.2mg/mL.Crude extract also has reducing power to a certain extent.These results indicated that the crude extract of procyanidins from broad bean shell had high antioxidant activities in vitro.
