摘　　要：采用洛阳可可生物科技有限公司生产的液体超级复合己酸菌进行扩大培养人工老窖泥,对现有窖池进行部分改造,并对改造后的效果进行比较分析。结果表明",液体超级复合己酸菌"在浓香型曲酒中生产应用,可缩短老化窖泥的复壮时间,其产浓香型曲酒的己酸乙酯含量明显提高。Liquid super compound caproic acid fungus （made by Luoyang Coco Biotechnology Co.Ltd.） was used for expanded culture of manmade aged pit mud and the production effects of the pits after partial renovation were compared with that of the original pits. The results suggested that the application of liquid super compound caproic acid fungus in the production of Luzhou-flavor liquor could effectively shorten the rejuvenation time of aged pit mud and ethyl caproate content in the produced Luzhou-flavor liquor was evidently higher than before.
