摘　　要：概述了彩色马铃薯所含花青素的种类、含量及功能,比较了彩色马铃薯色素调控的两种遗传模型,介绍了彩色马铃薯的育种研究进展,阐明了彩色马铃薯作为天然色素和抗氧化功能食品的巨大潜力。The types,content and function of anthocyanins in pigment flesh potato was reviewed. Two existing genetic models for anthocyanin pigmentation in potato were compared. The pigment flesh potato breeding progress was introduced to elucidate that pigment flesh potato are potential natural colourants and significant antioxidant sources in human nutrition.
