摘  要:详细介绍了果糖基转移酶的来源、性质以及果糖基转移酶和低聚果糖生产,并分析了果糖基转移酶和低聚果糖生产中存在的问题。酶催化合成低聚果糖所需的果糖基转移酶主要来自于微生物,来源于植物的果糖基转移酶不易于提取,尽管材料易得,但很难应用于低聚果糖生产。因此,来自于微生物的果糖基转移酶合成低聚果糖具有广阔的应用前景。The paper mainly particularly introduced the source and character of the enzyme, including production of β-fructosyltransferase and fructo-oligosaccharide, and also analyzed some problems during the production of β-fructosyltransferase and fructo-oligosaccharide.The β-fructos-yltransferase that composed fructo-oligosaccharide through catalytic reaction of the enzyme was mostly distilled from microbe. But the enzyme from plant could not be distilled as easy as microbe, so though the source was easy to obtain, there was no fructosyltransferase from plant which was applied to production up to now. Considering that fructosyltransferase from microbe was endowed with promising future in the synthesis of fructo-oligosaccharide.
