摘 要:目的了解湖南省市售食品卫生状况,为开展食品卫生监督提供依据。方法依据相关国家标准和地方标准。结果2006-2008年15类抽检食品总合格率为76.96%。黄花菜合格率低于异蛇酒、红薯粉、面粉和麻油类食品;保健食品合格率低于婴幼儿配方粉;食品添加剂合格率低于违禁成分和卫生指标;散装样品合格率低于定型包装样品合格率;散装样品中微生物指标合格率低于理化指标合格率。结论应加强餐饮业和食品加工企业的卫生管理监督,加强保健食品管理,重视散装食品的卫生问题,规范食品添加剂的使用。Objective To understand the hygienic status of food sold on the markets in Hunan Province, and to provide the reference for conducting supervision over food hygiene. Method Both national and local criteria on food hygiene were adopted in this study to make the assessment. Results The total qualification rate of food sampled from 15 categories dur- ing the period of 2006--2008 was 76.95%. The qualification rate of daylily was lower than those of the strange snake wine, sweet potato powder, flour and sesame oil food. The qualification rate of health food was lower than that of infant formula powder. The qualification rate of food additives was lower than prohibited components and hygienic criteria. The qualification rate of bulk- pack samples was lower than that of the stereotyped packaging ones; and that of the microbiological index in former food was lower than that of the physic chemical index. Conclusions Health supervision and management over food and beverage industry must be enhanced, in particular the management over health food; the hygienic issue of bulk- pack food must be concerned, and the application of food additive must be standardized.
