摘 要:以黄冠梨为材料,研究了20,60,100kV/m高压静电场处理对黄冠梨果实硬度、水分含量、酸含量和果实质量变化的影响。试验结果表明,高压静电场处理能很好地保持果实的含水量,抑制了黄冠梨果实硬度的变化,有效地控制了黄冠梨腐败的发生,延迟梨采后的衰老过程。在相同贮藏条件下,利用100kV/m高压静电场处理1h,对黄冠梨果实生化反应的抑制效果最好,其果实硬度、果实水分含量、酸度及质量损失率的变化均小于其他处理,保鲜效果最好。Huangguan Pears were used as raw materials to determined the effects of trentment by High voltage electrostatic field(HVEF) under different electric field intension (20kv/m,60kv/m, 100kv/m) on changes of Pear hardness, moisture content, acids content and weight. The results showed that treatment with HVEF could restrain water loss, inhibit change of fruits firmness, prevent decay of pear fruits and prolong storage time of post harvest pear fuirts. And under the same storage condition with 100KV/M for lh, the effect in inhibiting the bioreaetion of Huangguan pear and keeping fresh is the best. The changes of fruits firmness, moisture content, acids content and weight loss in this treatment were obviously less than those in other treatments.
