摘  要:目的:了解北京市居民酸奶消费行为的特点和主要影响因素,尤其是健康相关因素对酸奶消费的影响,为酸奶消费和酸奶行业的发展提供科学的参考信息。方法:在北京市海淀区的4家超市访问消费者并填写问卷。结果:多数消费者对酸奶的营养和健康价值认识不足,对营养强化和添加益生菌的关注度较低;健康信息的传播渠道对消费者影响显著。结论:加大对酸奶健康益处的教育力度,注重有效的健康宣称的告知途径,对促进酸奶产业的发展具有重要意义。Objective: To explore the main characteristics and key factors of yogurt consumption behaviors of Beijing consumers, especially the factors related to health, in order to provide scientific reference to yogurt consumption and the development of yogurt industry. Methods: Interviews with questionnaire survey was undertaken among randomly-selected consumers in 4 supermarkets and their neighbourhood in Beijing. Results: A high percentage of consumers underestimated the health benefit knowledge of yogurt and showed low attention to nutrient fortification and probiotie addition information. The channel of health information conduction made difference in yogurt consumption. Conclusions: The research indicates that more input in public education on yogurt-related health benefit, as well as more effective information channnel of health claim may be a remarkable importance in promoting the yogurt industry's development.
