摘 要:研究了乙醇/水溶液中魔芋葡甘聚糖(KGM)溶胶的流变曲线和透光率与乙醇浓度(c乙醇)的相关性,运用原子力显微镜观察了KGM分子链的微观形貌。结果显示:溶胶流变特性与c乙醇存在明显的依赖关系,c乙醇=11%时产生突变;透光率随c乙醇增加而减小;分散的KGM分子链在乙醇作用下发生了缠结。同时表征了KGM膜的结构和性能,结果表明随c乙醇增加,KGM膜的局部有序层叠排列明显,结晶度逐渐提高,透光率和吸水率降低。In different alcohol concentration(c乙醇) solution, the correlation between the rheological curve and transmittance of konjac glucomannan (KGM) sol and the c乙醇 were analyzed, and chains microstructure of KGM molecules were imaged by atomic force microscope(AFM). The results showed that the obvious dependent relation between the rheological property and the c乙醇, and the effect inflection point was acquired at c乙醇= 11%. With the increase of c乙醇, the transmittance decreased. Scattered chains of KGM molecules were entangled in alcohol solution. On the other hand, the results of KGM membranes analyzing showed that the membranes partial formed obviously sequential layer array, and the erystallinity gradually increased, then the transmission and absorbability decreased.
