摘 要:目的:了解十堰市市售食品中铅、镉、砷、汞污染状况及分布和高危食品种类。方法:在全国食品污染物监测网控制体系下,2000年-2008年采集14大类市售食品共计742份,应用氢化物原子荧光光度法检测砷、汞含量,应用石墨炉原子吸收法检测铅、镉含量。结果:742份食品样品中,铅、镉、砷、汞在食品中总检出率为63.2%,总超标率为3.77%,铅超标率为4.57%;镉超标率为3.23%;砷超标率为5.00%;汞超标率为1.56%。其中皮蛋类和肉及动物内脏类食品中总超标率分别为8.89%,7.09%,食用菌超标率为5.95%,超标率较高,是重金属污染的高危食品。其它类食品中污染不是十分严重,但都有铅、镉、砷、汞检出,检出率分别为:68.0%、62.6%、32.5%、60.9%。结论:说明铅、镉、砷、汞在食品中存在不同程度的积累,对人体健康存在潜在的威胁。Objective: To understand the contamination and distribution of the lead,cadmium,arsenicum and mercury and foods species in market selling foods in Shiyan city.Methods:Under the network system of the national food contamination,the total 742 samples of 14 big categury were collected from 2000 to 2008,the content of arsenicum and mercury were analysised by the hydrogenate atomic fluorescence photometry instrument,the content of lead and cadmium were analysised by the black lead stove atomic absorption instrument.Results:In all samples,the total detection rate and exceed scale rate of the lead,cadmium,arsenicum and mercury are 63.2% and 3.77%,and the exceed scale rate of the lead,cadmium,arsenicum and mercury is 4.57%,3.23%,5.00%,1.56% respectively,among the total,the total exceed scale rate of the preserved egg,meat including animal intermal organs and domestic fungus are 8.89%,7.09%,5.95% respectively.They are the high risk foods of heavy metal contamination.Conclusion:There are the different degree accumulation of the lead,cadmium,arsenicum and mercury in foods and the potential hazard for human health.
