摘　　要：分别介绍了油茶籽油、红花籽油、米糠油、葡萄籽油等几种具有代表性的特种油脂的化学组成及特点,并分析和总结了各特种食用油脂的营养价值与功效。The chemical composition and characteristic of some typical special edible oils and fats are introduced, such as oil-tea camellia seed oil, safflower seed oil, rice bran oil, grape seed oil, and so on. The nutrition value and functions of these edible oils and fats are analyzed and summarized.
