摘 要:利用现代酶技术对油脂进行改性来生产人乳脂替代品(HMFS),可使婴儿配方奶粉中脂肪酸的含量和位置分布更接近于人乳脂(HMF)。综述了人乳脂的组成和位置分布特点,人乳脂替代品的商业化产品,生产人乳脂替代品的方法,包括实验室和工业中的合成方法,介绍了膜技术在生产人乳脂替代品中的应用以及工业化生产存在的问题并对酶法生产人乳脂替代品的应用与研究做出了展望。Using lipase technology for the modification of oils and fats to produce human milk fat substitutes (HMFS), the fat composition of infant formulas have led to the development of new formula fats that provide a far better match to human milk fat(HMF), in its fatty acid content and positional distribution. In this paper, the fatty acid composition and positional distribution of HMF are viewed together with the marketed products of HMFS, processes for the production of HMFS in its laboratory and industrial plant, membrane technology has recently been applied for the production of HMFS. meanwhile, there are some questions in industrial production. And the applications prospect and current research of lipase-catalyzed reactions to produce HMFS are also introduced.
