摘 要:以玉米蛋白粉为原料,95%乙醇作溶剂,按固液比50∶100(g·mL-1)回流提取1h,经抽滤和真空减压浓缩得一种橙红色油状物,精制后为橙黄色粉末,即为以氧代环十四二酮为生色物质的天然黄色食用色素玉米黄,本法工艺简单原料易得,产品安全可靠,着色性好。Extraction of edible yellow pigment of corn from the powdered albumen of corn belongs in the food additive technology.The powdered albumen of corn was used as raw material and ethyl 95% ethanol as solvent.The ratio of solid to liquid is 50∶100(g·mL -1 ),and the time of refluxing is half an hour to four hour. The process involved gasping filtration and vacuum decompression.Something oily of orange red color was extracted and condensed so that it is refined to a powder of organ yellow color. The product is natural edible yellow pigment of corn,which contains oxycyclote tradecanedione(2,11) as the adding color substance. The technology is simple and the raw material is plentiful. The product is harmful and stable,and the coloring effect satisfactory.
