水貂、狐、貉肌肉氨基酸成分分析与营养价值评定

摘　　要：利用１２１ＭＢ型氨基酸分析仪对水貂、狐、貉肌肉中氨基酸组成进行测定，分析计算各自的氨基酸分（ＡＡｓ）、化学分（（ｃｓ）和必需氨基酸指数（ＥＡＡＩ），并与牛肉、羊肉进行比较，对其营养价值进行了评定。The paper deal with the composition of amino acid in the flesh of the mink,arctic foxes and racoon dog.It was counted that the amino acid separate,chemical separate and essential amino acid index of each animal flesh,and compared with the beef,mutton,analysis and appraise the nutritive value of the mink,arctic foxes and racoon dog.
