摘 要:目的:掌握陕西省市售熟肉制品中食源性致病菌污染状况,为陕西食品安全现状分析和管理提供准确信息。方法:2002年-2008年按照国家食源性疾病监测网监测要求和方法,对陕西省监测点内的农贸市场、超市、饭店销售的熟肉制品中沙门菌、单增李斯特菌、O157:H7/NM出血性大肠杆菌开展主动监测。结果:采集样品522件,检出目标致病菌86株,检出率16.3%。3种致病菌都有检出,主要以单增李斯特菌检出率最高,其次是沙门菌。结论:陕西省市售熟肉制品中存在有食源性致病菌污染,主要是单增李斯特菌和沙门菌污染严重,应加强食品安全卫生监督管理。Objective:To grasp the market and cooked meat products in Shaanxi Province in the contamination of food -borne pathogens, Shaanxi Food Safety for the status quo analysis and management to provide accurate information.
