摘 要:[目的]了解南充市各餐馆、食堂等单位食用油的质量,为卫生监督提供可靠的依据。[方法]依据GB/T5009.37-2003食用油卫生标准分析方法,抽取577份食用油(植物油、动物油)测定酸价、过氧化值、砷、铅、浸出油溶剂残留量、黄曲霉毒素B1、羰基价。[结果]577份食用油合格率79.7%,其中动物油合格率61.3%,植物油合格率91.2%,煎炸油合格率97.3%。[结论]学校食堂、小型餐馆食用油卫生质量存在较大问题,应加强食品卫生宣传和监督力度。[ Objective ] To understand the quality of edible oil in restaurants, canteens and other units in Nanehong City and provide a reliable basis for health supervision. [ Methods] According to the edible oil analysis method in GB/ T5009.37-2003, 577 samples of edible oil (vegetable oil and animal oil) were collected and acid value, peroxide value, arsenic and lead residue of leaching oil Aflatoxin B1 and earbonyl base were determined. [Results] The qualified rate was 79.7% for the 577 edible oil samples, 61.3% for animal oil, 91.2% for vegetable oil and 97.3% for fried oil. [Conclusion] The quality of edible oil in school canteens and small restaurants is poor. so health promotion and supervision should be enhanced.
