摘　　要：硒是人体必需的微量元素,具有抗氧化、抗衰老、防癌抗癌作用和化学防癌潜力。国内外研究应用植物或微生物作为硒的生物载体,主要集中在茶叶、水稻、食用菌、酵母和大蒜等食品上。植物性食品中生物可利用的硒是以甲基硒代半胱氨酸的形式存在。As an essential trace element in human body,selenium has functions of anti-oxidation,anti-aging,anti-cancer and bee proved to be a potential chemoprevention reagent for cancer.Plants or microorganisms are usually used as biological carriers o selenium in the foreign studies which mainly focus on such kinds of food as tea,rice,edible fungi,yeast and garlic.The bio-availabl selenium in plant foods mainly exists in the form of Se-MSC.
