摘  要:笔者研究了植物油料取油的预处理工序花生的碱提取工艺,分析了影响碱提取的因素,碱提取的pH值、温度、时间和料液比等,通过试验确定了最佳提取工艺参数,为增加我国植物蛋白的产品竞争力和植物蛋白的开发提供参考依据。The alkaline extraction process of peanut by the pretreatment working procedure of oil extraction from oil crops was studied. The impact factors of alkali extraction were studied, such as alkali extraction pH value, temperature, time and material-liquid ratio. The optimum extraction parameters were determined through experiments, so as to provide reference basis for increasing the competitiveness of vegetable protein products in China and the development of vegetable protein and the development of plant protein.
