摘 要:[目的]优化红曲黄色素浓缩液的喷雾干燥工艺。[方法]利用喷雾干燥机进行单因素干燥试验,进而筛选出适宜的助干剂及其添加量和热风量、进口温度、进料流量的适宜范围。[结果]单因素试验表明,最佳助干剂为麦芽糊精,其适宜添加量为10%;当热风量为1.00、1.10和1.20m3/min时,产率分别为20.50%、24.82%和18.64%;当进口温度为90、100、110和120℃时,产率分别为21.34%、26.62%、24.50%和20.08%;当进料流量为0.02、0.04和0.06cm3/min时,产率分别为22.58%、24.68%和18.26%。在实际操作过程中,红曲黄色素喷雾干燥工艺的最佳条件是:添加10%麦芽糊精,进口温度为100℃,热风量为1.10m3/min,进料流量为0.04cm3/min。[结论]该试验为喷雾干燥工艺在红曲黄色素干燥中的应用提供了依据。[ Objective ] The research aimed to optimize the spray drying technology of the concentrated solution of monascus yellow pigment. [ Method ] The suitable drying aid and its addition amount and the suitable ranges of hot air rate, inlet temperature and feed flow rate were selected out through carrying out single factor drying experiments with spray dryer. [ Result] The single factor experiments showed that the optimum drying aid was malt dextrin and its suitable addition amount was 10% ; when the hot air rate was 1.00, 1.10 and 1.20 m3/min, the yield rates were 20.50%, 24.82% and 18.64% resp. ; when the inlet temperature was 90, 100, 110 and 120 ℃, the yield rates were 21.34%, 26.62%, 24.50% and 20.08% resp. ; when the feed flow rate was 0.02, 0.04 and 0.06 cm3/min, the yield rates were 22.58%, 24.68% and 18.26% resp. In the practical operation process, the optimum conditions for the spray drying technology of monaseus yellow pigment were as follows: the addition amount of malt dextrin was 10% , the inlet temperature was 100 ℃, the hot air rate was 1. 10 m3/min and the feed flow rate was 0.04 cm3/min. [ Conclusion ] This experiment provided basis for the application of spray drying technology in drying monascus yellow pigment.
