摘  要:[目的]研究花红茶中的抗氧化物质对自由基的清除效果。[方法]分别采用DPPH和FRAP法测定了花红茶80%乙醇提取物清除有机自由基的能力,并将其与绿茶做了比较。[结果]VC浓度分别为0.002 1、0.002 6、0.003 5、0.005 2、0.010 4和0.020 8 mg/ml时,其对DPPH自由基的清除率分别为(14.90±0.13)%、(19.70±0.35)%、(21.80±0.17)%、(30.70±0.44)%、(62.80±0.17)%和(96.70±0.28)%,测定结果表明,VC清除自由基的能力与VC的浓度呈明显的量效关系。浓度为20.0、2.5、1.0和0.5 mg/ml的花红茶提取物对DPPH自由基的清除率分别为(90.15±0.14)%、(87.59±0.56)%、(77.89±0.43)%和(61.67±0.35)%。花红茶乙醇提取物的抗氧化活性比绿茶的高。在相同的浓度下,花红茶乙醇提取物的FRAP值比水提取物的大,表明花红茶乙醇提取物中抗氧化物质比其水提取物中的多。[结论]该试验为花红茶提取物生物活性的深入研究提供了参考依据。[ Objective] The purpose was to study the elimination effect of the antioxidative matters from Malus hupehensis on free radicals. [ Method] The eliminating capabilities on organic free radicals of the extracts extracted from M. hupehensis with 80% ethanol were determined by DPPH and FRAP methods and they were compared with the eliminating capability of green tea. [ Result ] When the Vc eoncn, were 0. 002 1, 0. 002 6, 0. 003 5,0. 005 2,0. 010 4 and O. 020 8 mg/ml, its elimination rates on DPPH were ( 14.90 ± 0. 13 ) %, ( 19.70 ± 0.35) % , (21.80 ± 0.17 ) % , (30.70 ± 0. 44) % , (62.80 ± 0.17 ) % and ( 96.70±0. 28 ) % resp. and the determination results showed that the elimination capability of Vc on free radicals showed obvious dose-effect relationship with Vc concn. When the concn, of extracts from M. hupehensis were 20.0, 2.5, 1.0 and -. 5 mg/ml, its elimination rates on DPPH were (90.15 ± 0.14) % , (87.59 ± 0.56 ) % , (77.89± 0. 43 )% and (61.67 ± 0. 35 )% resp. The antioxidant activity of the ethanol extracts from M. hupehensis was higher than that of green tea. When the concn, were same, the FRAP value of the ethanol extracts from M. hupehensis was higher that that of its water extracts, showing that the antioxidative matters in the ethanol extracts from M. hupehensis were more than that in its water extracts. [ Conclusion ] This experiment provided reference for thoroughly studying the bioactivity of extracts from M. hupehensis.
