摘  要:保健酒产生沉淀的原因有:①水质和原酒质量及酒度问题;②原酒成分及动、植物药材成分之间的物理、化学、生化反应;③加工工艺及操作问题;④容器的问题;⑤环境温度问题等。解决方法为选择合适的后处理净化方法,改进水质软化装置,对原料质量进行严格把关,加强产品质量管理、检测,调配前采用冷冻或加热处理,改进过滤设备,改进工艺方法,改善净瓶及包装、贮存设备等。The causations of precipitate in healthcare wine were summed up as follows: 1. water quality, base liquor quality, and alcoholicity; 2. physical, chemical and biochemical reaction between base liquor compositions and the added animal and herbs compositions; 3. processing techniques and operation; 4. containers; 5. environmental temperature. The corresponding solutions included selection of proper post-processing purification method, improvement of water softening device, strict control of raw materials quality, strengthening product quality management and liquor measurement, cooling or heating treatment before liquor blending, improvement of filtration apparatus and technical operation, and improvement ofwinebottles and packaging and storage equipment.
