高效液相色谱分析市售皮蛋、咸蛋中的苏丹红

摘　　要：目的：对广州市售咸蛋、皮蛋中的苏丹红染料进行分析。方法：采用高效液相色谱（HPLC）法等度洗脱。结果：苏丹红Ⅰ、Ⅱ、Ⅲ、Ⅳ在0.32～2.56 mg/L时其峰面积与进样质量浓度呈良好的线性关系,其线性相关系数为0.9999、0.9996、0.9995和0.9997,加标样品测定的相对标准偏差（RSD）为1.6%、2.9%、2.4%和6.1%（n=6）。苏丹红Ⅰ、Ⅱ、Ⅲ、Ⅳ的最小检出限均为10μg/kg。苏丹红Ⅰ、Ⅱ、Ⅲ、Ⅳ回收率均为90%～105%。结论：这种等度洗脱的高效液相色谱法测量苏丹红快速、灵敏、可靠、简便、重现性好。Objective：To detect sudan dyes in saled egg and preserved egg.Methods：By reversed-phase high performance liquid chromatography.Results：Sudan dyes have good linearity in the range from 0.32 to 2.56 mg/L,the correlation coefficients are 0.9999,0.9996,0.9995 and 0.9997 respectively for four Sudan dyes.The relative standard deviations of spiked sample are 1.6%,2.9%,2.4% and 6.1%（n=6）.The detection limits of all four Sudan dyes are 10 μg/ kg.The average recovery of four sudan dyes is 90% to 105%.Conclusion：This method is rapid,sensitive,simple,accurate and reproducible.
