摘 要:以健康成人为对象,采用氢呼气试验(BHT)的方法,观察魔芋精粉对谷类碳水化合物吸收的影响。结果表明:(1)镘头+魔芋组产氢量显著高于镘头组(P<0.01),米饭+魔芋组显著高于米饭组(P<0.01);(2)米饭+魔芋组的平均吸收率(18%)显著低于米饭组(98%,P<0.01),馒头+魔芋组的平均吸收率(45%)显著低于馒头组(85%,P<0.05);(3)米饭+魔芋组(58%)的产氢阳性率显著高于米饭组(9%,P<0.05),馒头+魔芋组(75%)显著高于馒头组(55%,P<0.05);(4)口-结肠转运时间(OCTT)依次为:乳果糖组<馒头+魔芋组<米饭+魔芋组<魔芋组<馒头组。研究提示:魔芋精粉通过与谷类食物的联合作用,能增加谷类碳水化合物在肠道中的不吸收程度,缩短谷类食物在消化道的转运时间。In the present study,the effect of refined donjac meals(RKM)on the absorption of cereal carbonhydrate was assessed by breath hydrogen test(BHT)in 13 healthy adults.Addition of RKM(4g)to rice or bread significantly in creased the amount of hydrogen producted in intestine(p<001)compare with only rice or bread.RKM significantly decreased the carbonhydrate absorption rate of rice from 98% to 18%(p<001)and bread from 85%to 45%(p<005),It was also seen that the percentage of subjects produced hydrogen above 18mg/m3(20ppm)obviously increased (from9% to 58% for rice,from 55% to 85% for bread)after RKM was added.Oralcolon transit time(OCTT)of the test meals were ranked by follow as Lactulose<RKM+Breab Lactulose<RKM+Bread<RKM+Rice<RKM<Bread.These results indicate that RKM can decrease effectively the carbonhydrate absorption of cereal.
