摘 要:以石榴籽为原料,利用超声波辅助提取石榴籽油,采用气相色谱-质谱(GC-MS)联用技术分析其脂肪酸组成,并对其理化性质及自由基清除能力进行了研究。结果表明:石榴籽油的主要成分是石榴酸58.68%,二十碳三烯酸15.02%,亚油酸6.06%,油酸6.46%等。理化测定结果表明:石榴籽出油率为23.53%,折光率为1.5168,皂化价为181.67mgKOH/g,碘价为150.9gI2/100g,酸价为0.81mgKOH/g,过氧化值为0.91meq/kg,相对密度为0.906g/mL;DPPH.及.OH最大清除率分别达83.62%和90.16%,可见石榴籽油是值得开发利用的营养保健油源。With pomegranate seeds as raw materials, the ultrasonic auxiliary extraction technology was used to extract its seed oil. The fatty acids composition of pomegranate seed oil were isolated and identified by gas chromatography-mass spectrometry,and its common physical, chemical properties and the scavenging capacity of free radical were analyzed.The test results indicated that the main components of fatty acids of pomegranate seeds oil were: punicic acid 58.68% ,eicosatrienoic acid 15.02% ,oleic acid 6.46%, linoleic acid 6.06% ,etc.Physical and chemical tests results showed that oil yield ration could reach 23.53% ,the refractive index of the seed oil was 1.5168,the saponification value was 18L67mg KOH/g the iodine value was 150.9g I2/100g, the acid value was 0.81mg KOH/g, and POV was 0.9] meq/kg, relative density was 0.906g/mL.The best scavenging rates of DPPH · and · OH were respectively 83.62% and 90.16%.As a healthy oil resource, it will have a profound developing potential.
