摘  要:[目的]建立北京市2008年奥运会餐饮业食源性致病菌监测体系,连续、动态掌握北京市奥运相关餐饮的食源性致病菌污染状况,预测可能存在的食品安全风险,为政府奥运会保障工作提供技术支持。[方法]典型选取奥运相关餐饮作为监测点,每月对即食食品和餐饮具采样检测,检测指标包括大肠菌群和9种常见食源性致病菌,结果用专用监测软件传输和汇总统计。[结果]餐饮业即食食品和餐饮具存在一定程度致病菌污染。[结论]食源性致病菌污染现况和动态变化趋势有一定规律,建议政府部门采取针对性管理措施,预防和控制奥运餐饮食品安全风险。[Objective] To set up the inspecting system of foodborne pathogens,get the data continually and evaluate the risk of food safety,so as to provide special support for government administration on food safety for the Olympic Games preparation.[Methods] Selected the typical restaurants as the spots inspected,sampled the ready-to-eat food and tableware and tested for the foodborne pathogens once every month,gathered and made use of the data by specific software system.[Results] Catering food and tableware were contaminated to a degree by the foodborne pathogens.[Conclusion] The contamination of foodborne pathogens changes regularly,some control measures for preventing foodborne diseases are advised to be taken by the government.
