摘  要:以初始体质量(31.34±0.29)g的健康鲤鱼鱼种为试验对象,以鱼粉为对照组,β-伴大豆球蛋白的添加量为40 g.kg-1,大豆球蛋白的添加量为60 g.kg-1,各配制成3种等蛋白(360 g.kg-1)等能(15.2 MJ.kg-1)的半精制饲料,在室内单循环控温养殖系统中进行6周饲养试验,探讨大豆主要抗原蛋白(β-伴大豆球蛋白和大豆球蛋白)对鲤鱼肌肉主要营养成分的影响。结果表明:大豆主要抗原蛋白使鲤鱼肌肉中粗蛋白含量、必需氨基酸总量下降,但与对照组差异不显著(P>0.05);鲤鱼肌肉中粗脂肪、粗灰分、氨基酸总量、鲜味氨基酸总量与对照组差异不显著(P>0.05)。因此,大豆主要抗原蛋白对鲤鱼肌肉营养成分尚未造成显著影响。The research investigated the effects of main soybean antigens (glycinin or β-conglycinin)on nutritional components of muscle of Cyprinus carpio. A growth trial was conducted on Cyprinus carpio with the initial weight 31.34 ±0.29 g for 6 weeks at controlled temperature in single recirculating system. Fish meal used as animal protein and purified β-conglycinin ( 40 g·kg^ - 1 diet) or glycinin ( 60 g · kg^- 1 diet) was conducted as three isonitrogenous ( 360 g·kg^ - 1 ) and isoenergetic ( 15.2 MJ·kg^ - 1 ) experimental diets, respectively. The results indicated that crude protein content, contents of total essential amino acids in muscle of Cyprinus carpio fed with β-conglycinin or glycinin declined, but there were no significant differences between treated groups and control group(P 〉 0.05). The contents of fat,ash content,total amino acids and total flavor amino acids in muscle were not significantly influenced ( P 〉 0.05 ). Therefore, main soybean antigens have no significant effects on the nutritional components in muscle of Cyprinus carpio.
