摘　　要：水合酪氨酸（hydroxytyrosol）是一种天然酚类化合物，具有抗氧化、抗菌抑菌、抗癌防癌、保护骨骼等生物活性。本文阐述了水合酪氨酸的主要用途，并介绍了化学法和酶水解法两种制备水合酪氨酸的方法。为今后的研究发展提供了理论依据。Hydroxytyrosol is a natural biophenolic compound. It has biological activity of antioxidant, antibacterial, anticancer, protection of bone. This paper described the main use of hydroxytyrosol, and introduced the chemical and enzymatic hydrolysis of two methods of preparation of hydroxytyrosol. It provides the theoretical theory for future research and development.
