摘  要:就我国植物油食用现况与相关的主要慢性病流行情况作一概述。并从食用油脂肪酸组成、n-3和n-6脂肪酸代谢以及脂质过氧化等方面说明偏食富含多不饱和脂肪酸植物油的潜在危害。并介绍了国内外主要油料作物品种脂肪酸育种改良新动向,及对植物油(脂)的合理食用提出建议。This paper reviewed the present situation of edible vegetable oil and the epidemic of main chronic disease,a potential negative effect caused by over eating of vegetable oil which was rich in polyunsaturated fatty acid was elucidated based on several aspects including the composition of fatty acid in vegetable oil,the metabolism of n 3 and n 6 fatty acid,as well as the lipoid peroxidation.Furthermore,the new trends for improvement of the composition of fatty acid for main species of oil crops at home and abroad were emphasized and proposals for the rational eating of vegetable oil and fats were offered.
