摘 要:我国是世界花生生产、消费和出口大国,花生种植面积和年产量均居世界前列。每年花生产业会产生大量的副产品,如花生饼粕、花生渣、花生壳、花生茎叶等,它们是潜在的膳食纤维资源。如果这部分资源不被充分利用,就会造成严重的资源浪费,也会对环境造成污染。因此,将花生产业的这些副产品加工成天然的膳食纤维,不但可以提高花生产业的附加值,还会带来巨大的社会经济利益。本文对花生膳食纤维的开发意义、生理功能、来源、提取方法和应用等作了详细的介绍,提出花生膳食纤维作为一种功能食品在我国具有广阔的开发应用前景。China is the largest country for peanut production,consumption and export trade.At the same time,the cultivated area and the annual output of peanut both list top position in the world.Every year, a large amount of by-products are produced in peanut industry, such as peanut meals, peanut residue, peanut hull, peanut stem and leaf.Those of them are potential dietary fiber resources.Serious resources waste and environmental pollution will be caused if these resources can not be made full use.Therefore,it is necessary that some natural dietary fibers are prepared with these by-products in order to upgrade peanut industrial additional value and create great social economical interest.The purpose of this paper is to summarize the development significance, the physiological function,the source,the extraction method and the application of peanut dietary fiber.It is pointed out that peanut dietary fiber as one kind of health and functional food had the good development and application prospect in China.
