摘 要:目的了解大学生对食物相克认知及膳食搭配行为现况,探讨部分相克食物食用安全性。方法采用自行设计的调查问卷,随机整群抽取兰州大学330名在校学生进行调查。结果调查大学生食物相克认知平均得分为(7.72±1.23)分,不同性别、生源之间得分比较差异无统计学意义;赞成食物相克说法、认为应避免、经常或偶尔考虑、听说过误食相克食物造成死亡的分别有279,241,273,82人,分别占84.55%,73.03%,82.73%和24.85%;听说过误食相克食物造成死亡、没听过、记不清的分别有82,164,84人,分别占24.85%,49.70%,25.45%;常见的相克食物不良反应率差异无统计学意义;仅32人食后产生过不适,占9.70%;此外,亲戚朋友、书籍是大学生获取食物相克相关信息的首要途径。结论部分常见相克食物具备一定食用安全性;应加强科学饮食、营养知识的宣传教育。Objective To study the cognition of mutual restriction between foods and practice of diet arrangement among undergraduates and to explore the safety of some mutual restricted foods.Methods With random cluster sampling,330 undergraduates were chosen from Lanzhou university and investigated with a self-designed questionnaire.Results The mean score on the cognition of mutual restriction between foods among the undergraduates was 7.72±1.23.No statistic difference was found in the scores between boys and girls(P0.05) and between students from diflferent areas.Among the students 279(84.55%) agreed with the view of mutual restriction between foods;241(73.03%) believed that it was necessary to avoid eating the mutual restriciton foods at the same time;273(82.73%) thought of the view some times or occasionally;82(24.85%) heard of death caused by eating the mutual restriction foods together.No statistic difference was found in adverse reaction rate between mutual restriction foods and normal foods.While only 32(9.7%) of the undergraduates felt uncomfortable after eating some mutual restriction foods.Friends,relatives and books were the major resources for the undergraduates to learn about the mutual restriction food.Conclusion Some daily mutual restriction foods are safe.Education on dietetic science and nutrition knowledge is needed.
