营养强化大米干燥方法的研究

摘  要:为了考察沸腾干燥方式对营养强化大米干燥的适用性,设计制作了沸腾式干燥试验装置,并以浸吸涂膜型营养强化大米为对象进行了干燥方式效果和设备性能的验证试验。试验结果表明:调节风速使物料沸腾高度在10cm以下,可以保证物料沸腾和循环的稳定,从而进行稳定的物料干燥;在温度一定的条件下,沸腾高度或风速对干燥速率有较大影响,沸腾高度、风速越大,干燥速率越大;在试验条件的风速和温度范围内,干燥过程的前2min内干燥速度较快,此后维持一定干燥速度至于燥终了,涂膜后大米干燥2.5~9min后水分能达到约15%。To research the applicability of using boiling method in enriched rice dryness, we had designed a corresponding drying deviee and done the experimentation of dryness effect and device capability using enriched rice which had been soaked and coated with membrane as object. The result showed that adjusting wind speed to make the boil height of materiel lower than 10cm can ensure the stability of boil an circle of materiel so that we can lead a stable process of materiel dryness. At the same time, boil height or wind speed affects the drying speed which will grow as boil height or wind speed grows with the same temperature. In addition, under our experimentation condition, the drying speed is higher during the first 2min and will keep after that period. Coated rice can maintain 15% water after being dried 2. 5 -9min.
